PEANUT BUTTER SANDWICH COOKIES

I first tasted these treats at a cooking contest in which I was a finalist and was very impressed by them.
They are added to my Christmas cookie collection and are given as gifts.
Mawood

1/2 cup creamy peanut butter
1 sleeve (4 ounces) Ritz crackers
1 cup (6 ounces) white, semisweet or milk chocolate chips
1 tablespoon shortening
Colored Sprinkles (optional... they'll make the cookies look pretty on your tray :-)

Spread peanut butter on half of the crackers: top with remaining half to make sandwiches. Refrigerate.

Melt chips and shortening on low in microwave or double boiler, stirring until smooth. Dip sandwiches, place on waxed paper and sprinkle with colored sprinkles if desired. Let cookies set until chocolate hardens.

Yield: 1-1/2 dozen cookies
