MEXICAN WEDDING CAKE COOKIES

One of my familys' favorites, I have been baking these for the holidays years and years, only my version is with added walnuts and called Walnut Butterballs. ;-)
Mawood

1 cup (2 sticks) butter or margarine, at room temperature
1/2 cup confectioners' sugar
2-1/4 cups all-purpose flour (I always use this type of flour in ALL my recipes)
1/4 teaspoon salt
1 teaspoon vanilla
Confectioners' sugar, for dusting

Beat butter until creamy. Gradually beat in sugar until smooth. Beat in flour, salt and vanilla; mixture will be stiff. Pinch off small pieces of dough; roll into 1-inch balls. Place 2-inches apart on ungreased cookie sheets.

Bake in a preheated oven at 375 degrees for about 13 to 14 minutes, until bottoms are golden. Do not let tops brown. Remove from sheet, cool slightly and roll in confectioners' sugar. ENJOY!

Yield: 2 dozen cookies
