MICROWAVE PEANUT BRITTLE

I've been making this wonderful recipe for over 18 years, from the recipe book with my first microwave. I make them every Holiday season (my husband requests it ;-)
Mawood

2 cups sugar
1 cup light corn syrup
1/3 cup water
2 cups raw peanuts
1 teaspoon salt
1 tablespoon butter or margarine
1 teaspoon vanilla
1 tablespoon baking soda

Grease 2, 15 -1/2 x 12-inch baking sheets. Keep warm. Place sugar, corn syrup and water in a 3-quart microwaveable casserole. Cook in *microwave on full power for 8 to 10 minutes, or until soft ball stage is reached. Stir occasionally during cooking time.

Stir in peanuts and salt, stir well. Cook on level 8 for 12 minutes, or until hard crack stage is reached. Stir in butter, vanilla and baking soda. Pour half of candy onto each sheet, spreading to 1/4-inch thickness. Cool and break into pieces.

Yield: about 2 pounds of brittle

*NOTE: made in a 700 watt oven

NOTE: I find soaking the dishes in very hot water makes for easy cleanup.
