Bunny Cookies


1 cup shredded coconut
Green liquid food coloring
24 ounces vanilla-flavored almond bark
1 package (1 lb.) peanut-shaped peanut butter sandwich cookies
Small, round fruit-flavored decorating candies
1/4 cup semisweet chocolate chips

In a small bowl, combine coconut and a few drops of food coloring; stir until coconut is tinted a light green. stirring constantly, melt almond bark over low heat in a small saucepan. Remove from heat. Using a fork, dip cookies, one at a time, into the bark. Put on a wire rack with waxed paper underneath.

Before bark hardens, decorate each cookie as shown, with paper cut-out ears. Press small amount of the coconut onto bottom of each cookie and press decorating candies on top of coconut and 1 for the nose. Melt chocolate chips in microwave or low heat and place in a pastry bag. Pipe chocolate onto each cookie for eyes. Allow to harden and store in an airtight container.

Yield: about 2-1/2 dozen cookies
