Apple Streusel Cake

3 Tbs. + 1/3 cup butter or margarine, divided
2 apples, Granny Smith, are good, peeled, cored and diced
1-1/2 tsp. pumpkin pie spice
1 pkg. pudding-in-the-mix yellow cake mix
1 cup chopped pecans
2 eggs
Confectioners' sugar

Preheat oven to 350 degrees. Grease and flour a 9-inch springform pan. In skillet, melt 2 Tbs. butter over low heat. Add apples and pumpkin spie spice. Cook, stirring occasionally, until apples are very soft, 8 to 10 minutes. Remove from heat and set aside.

Melt remaining butter; cool. In bowl combine 1/2 cup dry cake mix with 1 Tbs. melted butter and pecans, crumbling with fingers, set aside. Set aside 1 egg white for another use. Prepare remaining cake mix according to package directions with 1 cup water, remaining melted butter, egg and yolk.

Pour 1/2 of the batter into pan; top with reserved apple mixture. Pour remaining batter over; sprinkle with reserved crumb mixture. Bake 40-45 minutes or until cake center is set and topping is golden. Cool on rack 10 minutes. Remove sides from pan. Cool, then sprinkle with confectioners' sugar.
