Strawberry Raisin Muffins

4 eggs
1-1/2 cups sugar
2 cups fresh strawberries, cut in half
1-1/2 cup raisins
1/2 cup butter or margarine, melted
3 cups all-purpose flour
1/4 tsp. salt
1-1/2 teaspoons baking powder
3/4 tsp. cinnamon

Preheat oven to 350 degrees. Grease and flour muffin cups or line with papers. In bowl, combine eggs, sugar, strawberries, raisins and butter. Stir together flour, salt, baking powder and cinnamon. Stir dry ingredients into strawberry mixture until just moistened; batter will be thick. Do not over mix. Divide batter evenly into muffin cups.

Bake for approximately 20 to 25 minutes or until a toothpick inserted in center comes out clean and dry. Remove from oven and allow to cool in pan for 10 minutes before turning unto rack.

Yield: 24 muffins
