Bananas & Cream Bundt Cake

1/3 cup shortening
1-1/4 cups sugar
2 eggs
1 teaspoon vanilla
1-1/4 cups mashed ripe bananas (about 3)
2 cups flour
1-1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (8 oz.) sour cream
1 cup chopped walnuts
Confectioner's sugar

Cream shortening and sugar together. Add eggs one at a time. Add vanilla and bananas. Mix well. Combine dry ingredients and add to creamed mixture alternately with the sour cream; stirring until just combined. Stir in walnuts. Pour into a greased and floured bundt pan and bake in a preheated 350 degree oven for about 50 minutes or until cake tests done. Cool 10 minutes and remove from pan to wire rack to cool completely. Dust with confectioner's sugar.

Yield: 12 to 16 servings
