Pork Chops and Wild Rice

1 6 (oz.) box long grain and wild rice
2 cups hot water
6 lean pork chops
salt and pepper
1 can cream of mushroom soup
1/2 cup milk

Combine rice and water in a 2-1/2 quart casserole. Salt and pepper chops to taste. Arrange on top of the rice mixture. Bake covered in a preheated 350 degree oven for about 1 hour and 20 minutes. Combine soup and milk. When casserole is done, pour soup mixture over the casserole. Return to oven, uncovered, and bake until soup is hot and bubbly.

Yield: 4-6 servings
