SPARERIBS AND SAUERKRAUT

3 to 4 lbs spareribs, cut into serving portions
2 tablespoons cooking oil
salt & pepper to taste
1 large can of sauerkraut (I sometimes rinse in cold water if it is too sour)
boiling water

Brown ribs in hot oil until brown. Season with salt and pepper. Place a layer in a bottom of a baking pan, then a layer of sauerkraut. Continue layers ending with ribs on top. Add enough boiling water to cover all. Cover with foil and bake in a preheated 325 degree oven for 2 hours, or until the spareribs are tender and completely cooked.

Yield: about 4 servings
