Chocolate Banana Muffins
Got over-ripe bananas? You gotta try this recipe!

2 cups mashed bananas (about 4 medium)
1 egg
1/3 cup vegetable oil
1-1/4 cups sugar
1/3 cup water
1/3 cup cocoa
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon pumpkin or apple pie spice
1/4 teaspoon salt
1/2 cup chopped walnuts

Blend together bananas, egg, oil, sugar and water. In a large bowl whisk together cocoa, flour, baking soda, baking powder, spice and salt. Stir in wet mixture into the dry ingredients, then add nuts, mixing only until combined. Spoon batter into greased muffin cups 2/3 full.

Bake in a preheated 375 degree oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean and dry. Remove from oven and let cool in pan 10 minutes before turning out to a rack to cool completely.
