Roasted Chicken

1/4 cup butter or margarine
1 onion, chopped
2 cups flavored stuffing mix
1 tablespoon dried parsley flakes
Sage to taste, (optional)*
1 (3 lb.) roasting chicken, cleaned
6 carrots, cut into 3-inch strips

In small pot, melt butter. Saute the onions until tender; toss with the stuffing mix, parsley and sage. Stuff chicken. Place carrots in bottom of the slow cooker and top with the stuffed chicken. Cover and cook on LOW for 7 to 9 hours or until the chicken is tender.

*NOTE: I always like to add extra sage for added flavor
