Butternut Squash Pie
Good ... tastes just like sweet potato pie!

2 lbs. butternut squash, cooked, drained and mashed*
1 cup sugar
1/2 teaspoon salt
1 teaspoon pumpkin or apple pie spice
2 eggs, beaten
1 tablespoon melted butter or margarine
1-1/2 cups milk
1 unbaked 9-inch pie shell

Combine squash, sugar, salt, spice, eggs and butter; mix well. Gradually blend in milk. Pour mixture into the pie shell and bake in a preheated 450 degree oven for about 45 minutes or until knife inserted in center comes out clean. Cool on rack. Serve each piece with a dollop of Cool Whip or ice cream. YUM!

Yield: about 6 to 8 servings

*TIP: Blend all ingredients in blender for a smooth pie. :-)
