Sweet Potato Loaf

3-1/2 cups all-purpose flour
4 tsp. baking powder
2 teaspoons salt
2 cans (15.75 oz. each) sweet potatoes, drained and mashed
2 cups packed light brown sugar
1/2 cup butter or margarine, melted
2 eggs
2 Tbs. grated orange rind
1/2 cup orange juice
1-1/2 cups pecans, chopped
1-1/2 cup golden raisins
1/2 cup confectioners' sugar
1/2 tsp. grated orange rind
1-1/2 to 3 tsp. orange juice

Preheat oven to 350 degrees. Grease and flour two 8-1/2x2-1/4-inch loaf pans. Combine flour, baking powder and salt into a bowl. Stir together potatoes, brown sugar, butter, eggs and rind in another bowl. On low speed, alternately beat in the flour mixture with juice, beating until well blended. Stir in pecans and raisins. Turn batter into pans.

Bake for about 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pans on rack for 15 minutes, then remove loaves to cool completely. Beat confectioners' sugar, rind and juice in bowl until smooth. Drizzle over loaves.

Yield: 2 loaves
