Pan Rolls

1 cup warm water
1 tablespoon sugar
4 teaspoons active dry yeast
1 cup hot water
1/2 cup sugar
1/4 cup shortening
2 eggs, beaten
1 teaspoon salt
8 cups all-purpose flour

Place 1 cup of warm water, 1 tablespoon of sugar and the yeast into a large bowl. Stir until the yeast is dissolved. Add the hot water, sugar, shortening, eggs and salt. Mix well and then add as much flour as you can with a mixer. Turn out onto a floured surface and knead in enough remaining flour to make dough smooth and elastic. Shape into a ball. Place in a greased bowl turning once. Cover and let rise in a warm place until doubled, about 1 hour. Punch down and shape into desired rolls. Place in a greased pan and let rise until doubled. Bake in a preheated 350 degree oven for 12 to 15 minutes or until nicely browned.

Yield: about 3 to 4 dozen rolls

TIP: I halve this recipe for small gatherings
