Creamy Sweet Potatoes

5 pounds sweet potatoes, peeled and cooked
4 eggs, lightly beaten
1/2 cup orange juice
1/2 cup butter or margarine, softened
1/2 cup sugar
1 teaspoon vanilla extract
Dash salt
Miniature marshmallows

In large bowl, mash potatoes. Add eggs, orange juice, butter, sugar, vanilla and salt; mixing well. Pour into a greased 3-quart baking dish and bake for 35 to 40 minutes in a preheated 350 degree oven. Top with marshmallows and return to oven until puffed and melted, about 5 to 10 minutes.

Yield: 10 - 12 servings
