Choco-Mallo Treats and Crunchy Cups

Choco-Mallo Treats

2 eggs
1-1/2 cups confectioner's sugar
1 teaspoon vanilla
1/8 teaspoon salt
2 cups semisweet choolate-flavored compound coating, wafers or pieces
2 tablespoons butter
2 cups dry-roasted peanuts
2 cups minature marshmallows

Beat eggs until fluffy; add sugar, vanilla and salt. Blend well. Place chocolate-flavored compound coating and butter in a 2-quart glass baking dish. Microwave on full power for 1 minute. Stir and microwave 30 seconds more. Remove; stir until completely smooth. Add to egg mixture.

Beat well; stir in nuts and marshmallows. Drop into candy cups or onto waxed paper in clusters. Chill. Store in the refrigerator.

Yield: About 48 candies


Crunchy Cups

1 pound white compound coating, wafers or pieces
1 cup crisp rice cereal
1 cup minature marshmallows
1/2 cup broken pretzel pieces
1 cup natural or granola cereal
1 cup roasted peanuts
50 candied cherry halves
50 pieces candied pineapple

Place compound coating in a glass bowl; microwave on full power for 1 minute. Stir and microwave 1 minute more. Remove; stir to finish melting and blend in remaining ingredients except the candied fruit. Spoon mixture into paper candy cups; garnish with pieces of candied cherries and pineapple.

Yield: About 50 candies
