Divinity

2-1/2 cups sugar
1/2 cup light corn syrup
1/2 cup water
1/4 teaspoon salt
1 tablespoon vanilla
2 egg whites

Mix sugar, syrup, water and salt and cook until sugar dissolves and mixture boils. Stir occasionally. Meanwhile, beat egg whites until stiff peaks form.

When sugar and water mixture forms a 10 to 12-inch thread, pour very slowly over beaten egg whites. Continue beating approximately 5 minutes.

Add vanilla. Stir with wooden spoon until glass dissapears. Drop divinity from a teaspoon, pushing it off with a second spoon onto a butter cookie sheet.

Note: for a cherry-flavored divinity, add 1/2 small box of cherry Jello to mixture in place of vanilla.
